Back from the holidays, and it being cold outside, we have had several tasty meals at home all courtesy Executive Chef Sharon. She was inspired to keep us warm with food, and has hit the bulls eye with these five dishes.
First was a Pappardelle Bolognese — thick cut homemade pasta with a special meat and tomato sauce. Veal and pork combined into a perfect blend of texture and taste. So good with the wide cut pasta in every bite!
Next was a spicy butternut squash soup. Slightly sweet and a little kick goes so well when staying inside to avoid the cold weather and snow. I especially liked the shaved apple placed delicately on top.
After that was a baked cod with sautéed onions, tomatoes and feta cheese. I enjoyed the combination of the flaky fish with the bite of the sharp cheese and juicy, sweet tomatoes.
Sharon was then tempted to make a pizza of her own! All veggies and no sauce, the toppings consisted of hearty potatoes, sweet carrots, butternut squash, onions and bits of rosemary. The pie was warm, crusty and so so good.
The last warm dish we enjoyed was a curry. Again, all vegetables, Sharon thought this spicy dish would help clear up my still stuffy sinuses. The ginger, beans, potatoes were combined into the savory curry and served over a great coconut milk rice.
It’s going to be a long winter, but with meals at home like these I’ll happily stay in every night.
