A quick review of this week’s delicious green fare: We had an outstanding spread for St. Patrick’s Day. Corned beef, Irish soda bread, and Colcannon (a mash of potatoes and cabbage) rounded out the heavy plate. The beef was so tender and flavorful, I ate more than I needed to for 2 straight nights.
Another green meal followed the feast — a purée of cauliflower and spinach. The ultra-healthy, almost soup-like texture went perfectly with whole wheat pasta and a sprinkling of Parmesean cheese. It was a festive, filling week!
