A quick note about some excellent Sharon selections this last week — both became new favorites almost immediately. First up was a breaded-shrimp skewer, with a side of yellow squash. The shrimp were so juicy and delicious, I had to stop myself after devouring 2 1/2 full rows.
2nd was a fantastic homemade enchilada — with roasted Poblano peppers and Jack cheese for a filling. The hot sauce on top was also homemade, and so spicy we needed breaks from eating it!
Coupled with a side of refried beans and sour cream (to cool our aching tongues!) we gobbled the same meal down three nights in a row — the recipe really did make a lot. I can’t wait for Santa Fe!
