In case you haven’t noticed, we are loving all the fresh farmers market finds this summer. I’ve been trying find new recipes that utilize those bright heirloom tomatoes, fresh zucchinis, herbs, eggplants. Here are some of the recipes that I’m planning on trying or already have –
Layered Eggplant, Zucchini and Tomato Cassarole – I have made this before and it is tas-ty. All of those amazing summer ingredients in one dish, with cheese! Done and Done.
Mixed Herb Pesto – Um, yes please! This will keep for a while which ensures you have the taste of summer through fall. Top pasta or try it on potatoes and green beans.
Individual Zucchini, Lemon and Ricotta Galettes – I literally just made this two days ago and they were unbelievable. Super flaky, buttery crust that was a delicious vessel for zucchini kissed with citrus and creamy ricotta.
Grilled Sausage with Figs and Mixed Greens – Figs? Check! I’m starting to like them more. If mom likes them, they have to be good! This salad sounds so refreshing. If only I had a grill. Also cool, the recipe ends with a ‘day after’ dish – sausage and fig pizza. Put cheese on anything and I’m sold.
Corn Relish with Roasted Peppers – Fresh sweet corn and peppers, all in one neat little jarred recipe. I will certainly be making this and topping my (broiled, not grilled) Fall hotdogs.
And don’t forget to pickle your zucchinis: they get better with age. I’ll miss the summertime veggies, but hopefully these recipes get the best out of the season and help bring them into the next.
