From Sharon Martin:
- 1 T. olive oil
- 1- 28 oz. can of diced tomatoes
- 1 1/2 T minced garlic
- 1 tsp. dried oregano
- 1 tsp. herbs de provence
- 1/4 tsp. pepper
- pinch of salt
- Heat olive oil in large skillet. Add garlic and cook for 1 minute. Add oregano, herbs de provence, salt and pepper. Cook for another 1 minute.
- Add tomatoes to skillet and stir to combine all ingredients. Reduce heat to medium low and cook tomato sauce for 18- 20 minutes or until thick.
I like to add 4 oz. of Purple Haze goat cheese once the sauce is done for another layer of flavor. The herbs in the Purple Haze pick up on the herbs in the sauce making a harmonious flavor combination.
Also, good — add 1/2 cup of Parmesan cheese for a salty cheesy flavor.
This is a very simple, hearty sauce that works with all types of pasta and more!
